The potentiation of the production hasn’t adulterated the processing method, which consists in cold rolling and bronze drawn with a slow essication and at a low temperature. This method guarantees the final quality of the product, since during the transformation phase, it leaves the properties of the raw material intact : the semolina durum wheat.
